LOCAL AND ALL NATURAL PORK
Iowa is the top pork producing state, so it’s no surprise that Iowans have access to plenty of high-quality pork. With that said, not all pork is equal. In the late 1980s the pork industry started to focus on leaner, whiter meat. We believe that this focus has been a detriment to pork over the years. The reduction in fat and color has resulted in a pork product that also has reduced flavor. Heritage breed pigs, such as the Berkshire, are considered an heirloom breed which have experienced very little genetic change for many generations. This means that heritage breed pork tastes just as good as it did over a hundred years ago. We appreciate the deep red color, rich marbling and higher fat content of the heritage breed pork. We believe that this all adds up to greater flavor and is the reason why we have chosen to partner with farmers that produce heritage breed hogs.
