Tallow & Broth
Tallow and bone broth are both great ingredients to stock in your home kitchen, for many reasons.
Bone broth is created by simmering bones and connective tissue. At Old Station Craft Meats, we use the bones from our locally sourced animals and simmer the broth for 24 hours. Tallow is made by rendering animal fat to purify it. Here at the butcher shop we start with the kidney fat from a local beef, and render it along with salt and water to purify it. The rendering process is repeated until the tallow is bright white.
There are many benefits of bone broth and beef tallow. Both bone broth and tallow contain many important vitamins and minerals. They also contain anti-inflammatory properties. Bone broth (beef or pork) can be used in soups, sauces and gravies. It has also been gaining popularity as a health drink. Similarly, tallow can be used in the kitchen for cooking, seasoning cast iron pans or conditioning wood cutting boards. In addition, tallow can be used to make skincare products, hair care products, soaps, and candles.
Pro tip: For those that like to use cast iron for searing steaks, tallow is a great alternative to butter (tallow has a higher smoke point than butter). Try using our pork bone broth for homemade ramen or our tallow for frying delicious French fries. Our tallow also can be used as a replacement for shortening in your pie crusts.
