Jalapeño-Bacon-Honey Burger with Tex-Mex Fajita Cheese Sauce

This flavor-bomb burger is juicy and packed with spice. It was so good, we just had to share the recipe.

Jalapeno Bacon Honey

  • 1/2 cup honey

  • 1/4 cup brown sugar

  • 2 TBSP stone ground mustard

  • 5 TBSP butter

  • 1/3 cup jarred jalapeños (diced)

  • 2 TBSP jalapeño juice from the same jar

  • 1 Onion (diced)

  • 5 strips of bacon (diced)

Cook bacon on medium heat until crispy. Remove from the pan and set aside. Discard leftover bacon grease.

Melt the butter in a skillet. Saute the onion on medium heat until tender, about 5 minutes. Add honey, brown sugar, mustard, jalapeños, jalapeño juice, and cooked bacon. Stir to combine all the ingredients and dissolve sugar. Reduce heat so that the mixture simmers. Let cook for 20-25 minutes, stirring occasionally, until sauce reduces and thickens. 

Tex-Mex Fajita Cheese Sauce

  • 2 TBSP butter

  • 2 TBSP flour

  • 1 Cup milk

  • 1 Cup shredded cheese (Mexican mix)

  • 1 tsp Meat Church “Dia De La Fajita” spice rub

Melt the butter in a skillet, once melted, add flour and stir until combined with the butter. Let it cook out for a minute until bubbling. Once the mixture is bubbling, add the milk and stir to combine. This will form into a thicker sauce, when this happens, add the shredded cheese and spice rub, and stir until all ingredients are incorporated and the cheese is melted. The result should be a thick cheese sauce that can be spread onto the buns for serving. 

Season your burger patties with Meat Church “Holy Cow” spice rub. Cook on direct heat to desired doneness (about 5 minutes a side for medium rare). 

Next it’s time to put it all together and build your burger! Spread a spoonful of the Tex-Mex Fajita Cheese Sauce onto the bottom of your bun, then add a thick slice of tomato. Next, place your grill burger on top of the tomato and cover it with a  generous spoonful (or 2… or 3) of your Jalapeño bacon honey. Top it off with another spoonful or two of the Tex-Mex Fajita Cheese Sauce, add your bun top, and you're ready to eat!
